The Silk

The long awaited new cocktails menu by Slow is based on the Grand Tour whch was the Silk Road. A long journey that has served to evolve, improve, experiment and reinvent ourselves. We merged the food and mixology, always from the vantage point of the distillates. The cocktails have been developed with tenacity, love and devotion Francesc Bretau and Francesc Galera, always faithful to the mix of the classic and the scoundrel that Slow has been from the very beginning some five years ago.

Solid|Cocktails

Just how do cocktails evolve when we add them flavours typical of solid elements, food and spices, not just as aromas, but inside the cocktails themselves? We have expanded this trend, which we already hinted to in previous cocktails (see Las Ramblas, Un Cappuccino or Costa Brava), to another level. The solid part is not conceived as a pairing anymore, but is an inseparable part of the cocktail experience.

The cocktail ingredients include numerous cold and warm infused liquors, home-made syrups, airs and foams. Also of course liquors from the countries across this journey. The completely artisan preparation of some of the ingredients is in stark contrast to the use of absolutely modern techniques such as liquid nitrogen chilling or dry ice.

The | Counterpoint

The counterpoint is a provocation. This way of understanding mixology (that is, vs. balance) the cocktail is presented in a certain way (maybe a strong scent, or the way its looks anticipate a certain flavour…) but ends instead in an unexpected way: the flavour turns out to be soft, or surprisingly different. We love this contrast, this way of fooling the consumer (or diner guest, if you prefer). It runs in our blood.

The menu itself, this artifact we give our clients so that they chose a drink, might look like a travel journal, or a food menu. Deliberately ambiguous, seductive and extravagant, condenses cultural references to all the countries of our particular journey.

The Silk | Road

Our Silk Road will take us from the Far East (China, Japan), all the way through the Mongolian and Russian steppes, South and South East Asia (Vietnam, Siam, India or Pakistan), the Middle East (Persia, Jordan, Egypt, Turkey), towards the Mediterranean shores of Greece, Tunisia, Morocco and Italy, and the Bulgarian coast of the Black Sea.
From the countries in which there is barely any tradition of alcohol whatsoever, we have worked with its culinary heritage. The chosen distillates respect both the original and the blended ingredients. We do not pretend that the cocktails could have been created in their lands of origin (that is unthinkable in Muslim regions) but instead inspired by their rich sensory mosaics.
